The holidays can be a tricky time when it comes to food. You’re around people. There may not always be healthy options that you enjoy. Today I have a healthy sweet potatoes recipe that can help ease any anxiety.
You can still enjoy the flavors of Thanksgiving dishes you’ve eaten in the past. We’ll have roasted sweet potatoes with herbs and cranberries.
You can take this healthy sweet potatoes recipe to family gatherings. You can make sweet potatoes and chickpeas ahead of time. When you’re ready to eat, you can warm it up in the oven for just 10 minutes.
How to Make
Let’s keep things simple. Grab one bowl and 1-2 baking sheets.
You’ll slice your sweet potatoes into semi-circle discs. Toss the sweet potatoes in a mixing bowl so that they are well coated. Place in the oven for 30 minutes.
You’ll do the same for the chickpeas. Toss the chickpeas in a mixing bowl so that they are well coated. Place in the oven for 15-20 minutes. Note that you may want a baking sheet with edges as chickpeas can roll.
Flip the sweet potatoes after 15 minutes in the oven.
You want the sweet potatoes lightly brown and the chickpeas crispy.
To prepare your healthy sweet potatoes wraps, grab a plate. Then, top your tortilla with lettuce, sweet potatoes, chickpeas, and cranberries. Drizzle the sauce on top.

- 2 sweet potatoes
- 2 tablespoon coconut oil melted
- 1 teaspoon dried thyme
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper optional
CHICKPEAS
- 1 cup chickpeas rinsed and drained
- 2 tablespoon coconut oil melted
- 1 teaspoon dried thyme
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
FOR SERVING (optional)
- 3 tortillas
- Lettuce
- Herb sauce
- Dried cranberries
HERB SAUCE
- 1/4 cup hummus or tahini
- 1 tablespoon fresh lemon juice
- 1 teaspoon fresh dill or 1/2 teaspoon dried dill
- 2 cloves garlic pressed or minced
- 1/4 cup water
- 1/4 teaspoon salt
INSTRUCTIONS
Instructions
- Preheat the oven to 400 degrees F / 204 C.
- Wash and dry the sweet potatoes. Then, slice the sweet potatoes into round pieces about 1/2 cm.
- In a mixing bowl, add the sliced sweet potatoes, coconut oil, thyme, cinnamon, salt, and optional cayenne pepper. Toss so that the sweet potatoes are well coated.
- Place the sweet potatoes on a baking sheet in a single layer.
- In the same mixing bowl, add the chickpeas, coconut oil, thyme, cinnamon, cumin paprika, and salt. Toss so that the chickpeas are well coated.
- Place the chickpeas on a baking tray and cook for 15-20 minutes.
- Flip the sweet potatoes after they have been cooking for 15 minutes.
- While the sweet potatoes and chickpeas are cooking, you can make the sauce.
- To a bowl, add the sauce ingredients. Give it a stir and set aside.
- For serving, place a tortilla on a plate. Top with lettuce, sweet potatoes, chickpeas, and cranberries. Drizzle the herb sauce on top. Enjoy!
