It wasn’t until I started adding in foods and recipes that I actually enjoyed that I started feeling better about myself. And my friends this healthy sweet potato recipe makes for an ideal side or even enjoyed on its own. It’s comforting and filling.
It only takes 30 minutes to make with almost all of the time spent letting the sweet potatoes roast. You can enjoy getting other things done in the kitchen or relaxing until you hear your oven timer ding.
How to Make this Sweet Potato Recipe
Preheat the oven to 400 degrees F / 204 C. Line a baking tray with parchment paper.
Cut the sweet potatoes in half lengthwise. This will help the sweet potatoes cook faster.
Toss the chickpeas and spices in a mixing bowl.
Place the chickpeas on the same baking tray or you can use another tray. The sweet potatoes and chickpeas will cook for about 25 minutes.
While the sweet potatoes and chickpeas are cooking, combine your ingredients for the sauce in a small mixing bowl. Give it a nice stir until well combined. Set the sauce aside.
Remove the sweet potatoes and chickpeas from the oven and let them cool. Then, take the back of a spoon and mash the insides of the potatoes. This will create space for the chickpeas.
Then, top with the chickpeas and sauce. This healthy sweet potato recipe tastes best served warm.
