Hey there friends! What has simple ingredients, cooks in one pot, and comes together for a quick weeknight dinner? This vegetable soup recipe! We’re talking really easy.

You know the kind of easy dinner where you turn on the stove and heat it up.

We sure love these kinds of dinners! Definitely a must meal when we’re working, watching kiddos, and trying to eat healthy too. Now, there is no need to compromise our health because this recipe comes together in no time with any veggies we’ve got on hand.

This soup is a brilliant way to get all our veggie intake in one go. Today we are using frozen vegetables to cut down on any unnecessary chopping, but if you have fresh vegetables, use them! Fresh vegetables help enhance the flavor.

Vegetable soup is also a great way to use any other leftover veggies in your fridge, so feel free to add them in. I’ve also used broccoli, zucchini, and cauliflower when I had some in the kitchen and they work really well too.

I also love using homemade vegetable broth in this vegetable soup recipe. Homemade vegetable broth is super easy to make and keep on hand. It packs in the nutrients without all the sodium and preservatives. Check out my video to see how easy it is to make and add to soup recipes like this one.

How to Make Vegetable Soup

Start by heating coconut oil in a large pot over medium heat. Add onion and saute for 3 minutes. Add garlic and saute for 30 seconds longer.

Then, add your homemade vegetable broth, potatoes, tomatoes, bay leaves, dried oregano, salt, and pepper. Bring to a boil and then reduce heat to a simmer and cook for 15 minutes.

Add the remaining ingredients and cook for another 10 minutes.

That’s all we need to do.

We can also play around with this one and tweak it to our liking. For more flavor, we can add other dried herbs such as basil, rosemary, or thyme. Enjoy this soup warm!

The vegetable soup will keep stored in the fridge for 5 days. And it really is quite delicious!

  • 2 tablespoon coconut oil can use olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 3 potatoes, diced into 1/2 in / 1 cm pieces
  • 2 tomatoes, diced
  • 2 bay leaves
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups frozen broccoli
  • 5 cups frozen mixed vegetables
  • 1/2 teaspoon chili pepper flakes

Notes

When we use fresh vegetables, it can enhance the flavor more. It requires extra chopping though and a longer cooking time.
Feel free to add any vegetables you have on hand. Cauliflower, broccoli, and zucchini all work well together.
