Some days you need breakfast to be as easy as possible. Instead of reaching for store bought cereal you can learn how to make muesli in minutes.

Just throw your ingredients into a bowl and wait 10 minutes for the oats to soak up the plant based milk and coconut yogurt.

So often when I travel I don’t have the luxury of having a stovetop or microwave to heat up my breakfast. I’ve always been a lover of oatmeal, so that is where muesli comes in.

It is simple and doesn’t need to be heated. Rolled oats, seeds, and plant based milk are a must. The rest of the topping you can change up based on your personal preference. I love adding in mashed berries, coconut yogurt, and peanut butter to give this dish more flair.

Mash berries in a bowl. Set aside.

In a mixing bowl, add mashed berries, rolled oats, coconut milk, coconut yogurt, chia seeds, and pumpkin seeds. Let sit for 5 minutes until soft and creamy.

Top with peanut butter and drizzle of honey.

You can also toast the oats and seeds and add in anything else you like.
