So breakfast do you love it or hate it? With breakfast and even snacking, we can tend to go towards the same foods and it can get pretty boring. I often eat oatmeal and smoothies for breakfast.

I no longer enjoy eating the same thing for breakfast everyday. This hasn’t always been the case though. Five or ten years ago, I ate the same food over and over again.

I’ve come to realize that we can allow ourselves foods that we actually feel good about. When we have a variety of foods and we’re being kind to ourselves, we are less likely to want to binge or choose our negative habits.

What if we have chocolate for breakfast? Yessssssss please. Warm chocolate chip zucchini muffins are outstanding anytime of the day. And can easily be reheated to give you some melted ooey gooey chocolate goodness to start the day.

BENEFITS OF CHOCOLATE CHIP ZUCCHINI MUFFINS

One of the big benefits of zucchini is that it goes so well in breads and muffins. The zucchini flavor is so subtle and when grated you might not even realize it’s in your tasty muffins.

When I’m making bread or muffins, I tend to opt for zucchini over banana bread. A banana bread at times can have an overpowering banana flavor. Yet this isn’t the case with zucchini’s subtle flavor mixed in with chocolate chips and a hint of cinnamon.

Another benefit of zucchinis is that you can add some green veggies to chocolate chip muffins. So you can enjoy your veggies and chocolate too, not bad right!?

INGREDIENTS

Ingredients

  • 1 cup shredded, unpeeled zucchini (about 1 medium zucchini)
  • 1 1/2 cup all purpose flour or pastry flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoon coconut oil melted and cooled
  • 1/3 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 ripe banana mashed
  • 1/3 cup chocolate chips plus 2 tablespoons for optional topping
INSTRUCTIONS

Instructions

  • Preheat the oven to 350 F / 176 C.
  • Place a little coconut oil in each muffin tin. You can also use muffin liners. I have found just a bit of coconut oil rubbed in the muffin tin does the trick without making extra waste.
  • With your hands, squeeze shredded zucchini to remove excess water from the zucchini. You can do this over a sink. Set aside.
  • In a mixing bowl, add flour, cinnamon, baking powder, and salt. Give it a stir and set aside.
  • In another mixing bowl, add in egg, coconut oil, honey, and vanilla. Whisk or stir until combined. Then, add in the mashed banana and mix again. Slowly add in the dry ingredients and stir until combined. Fold in shredded zucchini and 1/3 cup chocolate chips.
  • Transfer the chocolate chip zucchini batter to a muffin tin. Fill each muffin tin 3/4 of the way. Top the muffins with optional 2 tablespoons of chocolate chips.
  • Bake for 25 minutes or until a toothpick inserted comes out clean. Let the chocolate chip zucchini muffins cool.

Notes

When eating these chocolate chip zucchini muffins, they taste best reheated so they are nice, warm and the chocolate is gooey.
