There is something special about a warm comforting breakfast and this recipe for baked oatmeal does just that. It’s wholesome, filling, and oh so satisfying. Baked oatmeal takes your typical bowl of oatmeal to another level.
Baked oatmeal has almost a bread like pudding consistency and is served in a large baking dish. It’s texture makes it great for cutting into individual portions and reheating this baked oatmeal throughout the week.
Recipe for Baked Oatmeal ingredients
You really can’t go wrong with the ingredients in this recipe for baked oatmeal. You can swap out any ingredients with what you already have on hand. If blueberries are in season, use blueberries. If you want to use frozen berries, use frozen berries. The idea is to use what you love and keep it simple.
- Oats
- Plant based milk (I like to use almond or coconut milk)
- Berries (fresh or frozen)
- Ripe bananas
- Nuts
- Flaxseed powder
- Cinnamon
- Vanilla
- Baking powder
- Salt
In my recipes, you’ll notice that there isn’t a lot of artificial sugar. I like to naturally sweeten dishes. This recipe gets the right amount of sweetness from ripe bananas. The baked oatmeal comes together with the help of ground flaxseeds. You don’t need to use eggs to bind this recipe together.
To get a warm comforting flavor, we’ll add in some vanilla and ground cinnamon.
HOW TO MAKE THIS RECIPE FOR BAKED OATMEAL
Preheat the oven to 350 F / 180 C.
In a small bowl, combine the ground flaxseeds and water. Give it a stir. Set aside for 5 minutes.
In a large mixing bowl, mash the ripe bananas with a fork. Add in the plant based milk and vanilla extract. Give it a stir until combined. Add in the flax egg mixture. Stir again.
Add to the mixing bowl oats, cinnamon, salt, baking powder, and chopped almonds. Stir until combined.
Gently fold in the strawberries and blueberries.
Transfer the mixture to a 9 x 12 inch (23 x 31 cm) baking dish. If it is a metal pan, you’ll want to lightly coat the pan with oil.
Bake for 40 minutes or until the top is nice and golden. Remove from the heat and let cool for a few minutes. Drizzle the peanut butter on top before serving.
I prefer this oatmeal fresh out of the oven. You can also serve this at room temperature.
