There was a time not too long ago when I despised peanut butter. Really this was true. I loved peanut butter yet I thought peanut butter was the reason why I was binge eating.
I only later discovered that the food wasn’t the issue. It was something within. That I didn’t have a real purpose, feel understood or worthy. So for 10 plus years I avoided peanut butter and chocolate yet who doesn’t love this divine combo? It is a match that tastes too good to be true.
When we treat ourselves with kindness, allowing ourselves things that we love and take care of ourselves we’re less likely to binge. Yet for yearsssss I would restrict all day and binge at night. Eating the blandest food in the day and wondering why I craved anything chocolatey and sweet in the evening.
Well my friends this easy peanut butter pie recipe is too good to pass up on. The chocolatey crust comes together in minutes and pairs so well with the creamy peanut butter filling. It tastes delicious and refreshing on a summer afternoon.
HOW TO MAKE
In a mixing bowl, add in all the crust ingredients and stir until a dough forms. Transfer the dough to a pie dish. I used a 9 inch pie dish. You could also use a springform pan. Press the dough into the bottom of the pan. Set aside.
In a blender, add the filling ingredients and blend until smooth.
Transfer the filling on top of the pie crust. Use a spatula to spread the filling out.
In a small mixing bowl, add the topping ingredients and give it a stir.
Place the chocolate topping in a ziplock baggie and cut out a small hole to decorate the easy peanut butter pie. You can also use a spoon and drizzle the chocolate topping over the pie. Both options will taste delicious!
Transfer the pie to the freezer for a few hours.
When ready to serve, remove the pie from the freezer and let thaw for 5 minutes.
Then cut into slices. No need to pie a store bought pie ever again. Your friends will think you’re an incredible baker with how brilliantly the flavors come together in this easy homemade peanut butter pie. So enjoy a dessert that you know the ingredients and you feel good about.

- 2 tablespoon honey or maple syrup

- 1 teaspoon water
