Mmmmm good morning. Hello, good food. Maybe you can remember as a kid enjoying French toast and watching cartoons on the weekends. Maybe your family made it over and over again yet you may have some anxiety around French toast. The milk, eggs, and bread all combined together. It can feel like too much at times.
Yet what if you used ingredients that make you feel good. So instead of using milk or a heavy half and half you could use plant based milk such as almond or coconut milk. You can select an unsweetened one. And instead of using sandwich bread that you grew up with as a kid that was often cheap. You could use sourdough bread that has flavor and texture.
This coming weekend you can have a breakfast that comes together in minutes and you feel proud about.
INGREDIENTS
For your French toast with almond milk, we’ll use:
- Sourdough
- Eggs
- Almond milk, unsweetened – You can also use coconut milk too.
- Sugar or honey – I’ve tried both and they work well.
- Vanilla
- Cinnamon
- Pinch of salt
You can use any sandwich bread on hand. The vanilla and cinnamon help to enhance the flavor.
HOW TO MAKE FRENCH TOAST WITH ALMOND MILK
Take a big mixing bowl and add in the eggs, almond milk, sugar, vanilla, cinnamon, and pinch of salt. Give the mixture a good stir or whisk.
Place the bread in one slice at a time. Flip the bread to make sure both sides are coated. You don’t want the bread to sit in the mixture too long as it can soak up too much liquid and become soggy. Set the coated bread to the side on a plate.
Heat a pan or skillet on medium heat. Add coconut oil or melt butter in the pan. Then place the slices of coated bread in the skillet. Cook each side of the bread for 2-3 minutes or until lightly golden brown.
Place on a plate and top with honey and berries. Enjoy right away. This French toast with almond milk tastes best fresh.
