In this chia pudding recipe, coconut milk is a great liquid to use. It’s creamy and a great alternative to dairy milk. Coconut milk comes from the white flesh of coconuts. Coconut milk is found often in South East Asia.
Combine cacao/cocoa powder, honey, cinnamon, vanilla, and salt in a bowl. Stir with a spoon to combine. Add the coconut milk and stir.
Add the chia seeds and stir again. Let the chia pudding mixture stir for five minutes and stir once more.
Place in the fridge for 2-3 hours to create the chia pudding texture.
Top with shredded coconut, sprinkle of salt, and granola.
