Growing up in Cincinnati, Ohio, I was pretty familiar with mild weather. Snows in the winter, rains in the spring, and is humid in the summer.
Needless to say, I was not prepared for the cold intense winters that I’d experience living in the north. Silly me even interviewed for my first job out of college (Target headquarters) on a beautiful spring day. I knew it would be cold and snowy in Minnesota but I thought it couldn’t be that bad. Right?
Well I would soon learn how to properly bundle up in layers, run outside while avoiding icy sidewalks, dream of sunshine, and drink coffee to keep warm.
Two months into dating, Mitch and I had a conversation about what was important in our lives. I talked about moving back to Cincinnati and Mitch talked about traveling the world. A little different you’d think.
You see I liked what was comfortable. Change and adventure was unfamiliar and may I even say scary. I was tired of the cold and ready to feel challenged again as the company I worked for wasn’t growing and I felt stuck in the same job.
Ready for a change
I started doing a little research and felt like I hit a gold mine when I came across Ubud, Bali. A lush tropical, yoga paradise. Blog after blog post I could feel the excitement growing in my body. I knew that this would be an incredible place to go.
Hello sunshine
Sure enough Bali was our first stop in Southeast Asia and holy cow did I become amazed at the plethora of healthy food and all around good vibes. Vibrant juices, smoothie bowls, and filling salads!
At the time, I had never heard of a smoothie bowl and despised any healthy juice. To me, juices tasted bitter and uninspiring. Yet now in Bali they tasted sweet and refreshing. And would soon become an almost daily mid-morning snack.
Start Slow
With anything new, it’s helpful to go slow and ease into it. The last thing we want is to try one strong recipe for beet juice and be turned off from all healthy juices.
So you can start off creating a mild recipe for beet juice that still packs in the nutrients. I typically like to use veggies and greens as my main ingredients. This way you won’t have juice packed with sugar.
Beet Juice Ingredients
For this recipe, beets will be our main ingredient. We’ll also get a lot of our liquid content from a cucumber. Cucumbers are often used in juice recipes and are reasonably priced too!
To transform this recipe for beet juice into something you crave, we’ll add lemon and ginger. The lemon helps balances out the earthy flavor from the beets.
How to Make
To make this recipe for beet juice, you can use a juicer or blender. Both work great! I’ve used a slow processor juicer today but you don’t need a fancy juicer to enjoy healthy juices.
Remove the skin from the beets and ginger. You can slice the beets into chunks and cucumbers into long narrow pieces. Remove the lemon peel from the lemon.
You can adjust the amount of lemon based on your taste preference. If you’re new to juice, you may want to add more lemon to balance out this drink. You can also add more cucumber to have more liquid in this beet juice recipe.
If you’re using a juicer place all ingredients in a juicer and juice it up!
If you’re using a blender. you’ll want to add all the beet juice ingredients plus 1/4 cup of water to a blender and blend. You may need to pause and use a spatula to move things along.
When well mixed, pour the juice over a strainer and use a spatula or your hands to get the remaining juice. Note that your hands can have a ruby red color.
Your kiddos may be reaching for this recipe for beet juice because it’s just that good. Take my one year old for example. When he sees it, he points for some and slurps it up within minutes.
