Preheat the oven to 350 F / 176 C.
Peel the apples using a paring knife.
In a mixing bowl, add apples, lemon juice, cinnamon, ginger, cornstarch, coconut sugar, and apple juice. Mix until well combined. Transfer mixture to 9×13 inch baking dish.
In a mixing bowl, add topping ingredients and mix until well combined. Spread the apple mixture in the baking dish.
Bake for 45 minutes – 1 hour or until the top is lightly golden. Let cool and serve.
