We can do just that by simply adjusting the main ingredients that go into our zucchini bread. Typically the three main ingredients in zucchini bread are sugar, flour, and zucchini. What if we used ripe bananas for a natural sugar and almond flour which is easy to digest?

I don’t know about you but I like to keep it simple when it comes to making almond flour zucchini bread. No need for fancy blenders or mixers. All you need is one bowl and a fork. Plus one bowl recipes make a lot less dishes to clean later on.

When the recipe is easy to make, you are more likely to make it again and fill your home with nourishing wholesome food. You can reach for something that you feel good about.

That’s why this recipe makes one loaf of almond flour zucchini bread. You can always see how you feel and make more next time.

HOW TO MAKE ALMOND FLOUR ZUCCHINI BREAD

Preheat the oven to 350 F / 175 C and line a 8×4 loaf pan with parchment paper.

In a mixing bowl, mash the ripe bananas with a fork. Add in the egg, honey, and coconut oil. Mix together and give it a stir.

Add in the grated zucchini. Give it a stir.

Next, add in the almond flour and mix until just combined. Sprinkle in the cinnamon, nutmeg, baking soda, and salt. Stir again to ensure the ingredients are well dispersed.

Pour into the lined loaf pan.

Bake for about 35-40 minutes. When the bread is done, it should feel firm and be golden brown on top. You can check by inserting a toothpick into the bread. If it is done, the toothpick will come out clean.

  • 2 ripe bananas mashed

Notes

It is important the bananas are ripe, so that they give this bread a natural sweetness.
You don’t want to substitute 1:1 the almond flour for all purpose flour. Almond flour binds differently than all purpose flour. Just to be certain I tried this same recipe with all purpose flour and the zucchini bread didn’t have the same flavor.
