Blackberries, blueberries, strawberries, you name it! It doesn’t have to be summer to enjoy berries. And frozen blackberries will be the star of this crowd pleasing blackberry cobbler.
A typical blackberry cobbler is a tart dish made with lots of sugar, milk, and butter with a floury biscuit or cake like top. However my blackberry cobbler tastes just as good if not better than the traditional one without all the unnecessary sugar and dairy. You’ll be licking your lips and feeling so good after eating this wholesome dessert.
This dish is so easy to make yet impressive to share with family and friends.
BLACKBERRY COBBLER INGREDIENTS
You can make a blackberry cobbler with two main parts: the blackberry mixture and cobbler top. The blackberry mixture get’s it’s tartness from combining freshly squeezed lemon juice with blackberries. I like to use frozen blackberries but fresh ones work well too.
To make this cobbler extra wholesome, we’ll use rolled old fashioned oats. When baked in the oven, the oat cobbler turns golden brown and gives this cobbler that coveted crumbly top. It’s by far my favorite part of the dish. My little guy actually asks for just the cobbler top because it is delicious!
HOW TO MAKE BLACKBERRY COBBLER
The first step in how to make this blackberry cobbler is to preheat the oven to 400 F / 205 C.
On a stove top, heat an oven safe skillet over medium heat. I used a 8 inch / 23 cm cast iron skillet. Add the blackberries, lemon juice, coconut sugar, vanilla, and 2 tablespoons of water. Reduce to a simmer and cook for 7-10 minutes. Stir the blackberry mixture occasionally and then remove from the heat.
While the blackberry mixture is cooking, you can make the cobbler topping. To a large mixing bowl, add in the oats, coconut sugar, cinnamon, baking powder, and salt. Give it a stir. Then, add in the plant based milk and coconut oil. Stir again until well mixed.
Place spoonfuls of the cobbler mixture on top of the warm blackberry mixture. Transfer the warm skillet to the oven and cook for 20 minutes or until the top is golden brown.
Remove the blackberry cobbler from the oven and let cool for a few minutes before serving.
When we make this blackberry cobbler, it tastes delicious fresh out of the oven. I must say that the blackberry cobbler heats up so well as leftovers. And this warm cobbler dessert is just calling for a nice dollop of vanilla ice cream of top. When the ice cream melts into this dish, it gives off the right amount of sweetness and warmth.
