1/2small lemon juice
5tablespooncoconut sugar
1/2teaspoonvanilla extract

1cuprolled oatsgluten free if desired

1/4teaspoonsalt
1/4cupplant based milkunsweetened (I like to use almond or coconut milk)
2 1/2tablespooncoconut oilmelted

Preheat the oven to 400 F.
On a stove top, heat an oven safe skillet over medium heat. I used a cast iron skillet. Add the blackberries, lemon juice, coconut sugar, vanilla, and 2 tablespoons of water. Reduce to a simmer and cook for 7-10 minutes. Stir the blackberry mixture occasionally and then remove from the heat.
While the blackberry mixture is cooking, you can make the cobbler topping. To a large mixing bowl, add in the oats, coconut sugar, cinnamon, baking powder, and salt. Give it a stir. Then, add in the plant based milk and coconut oil. Stir again until well mixed.
Place spoonfuls of the cobbler mixture on top of the warm blackberry mixture. Transfer the warm skillet to the oven and cook for 20 minutes or until the top is golden brown.
Remove the blackberry cobbler from the oven and let cool for a few minutes before serving.

You can substitute the blackberries for blueberries. You can also make it with a combination of blackberries and blueberries.This blackberry cobbler tastes delicious sliced into individual portions and reheated.
