Let’s learn how to make a breakfast burrito. Vegetarian friendly filled with eggs, potatoes, bell peppers, and black beans. Don’t forget to add a little salsa too.

INGREDIENTS

Ingredients

  • 6 eggs
  • 4 tortillas
  • 1/2 cup black beans
  • Mixed greens
  • Salsa

Potatoes

  • 3 potatoes cubed
  • 1 tablespoon coconut or olive oil
  • 1/2 onion chopped
  • 3 cloves garlic minced or pressed
  • 1 teaspoon cumin
  • 2 teaspoon paprika powder
  • 1/8 teaspoon cayenne pepper
  • 1 teaspoon salt

Red Peppers

  • 1/2 red bell pepper chopped
  • 2 cloves garlic minced or pressed
INSTRUCTIONS

Instructions

  • Sauté potatoes and onions together. Add in the garlic and spices after a few minutes. Cook for 15 minutes turning occasionally until the potatoes are lightly browned. Set aside.
  • Sauté bell peppers in a separate pan. Add the garlic at the end so that it does not burn. Cook for about 5-7 minutes. Set aside.
  • Scramble the eggs in a separate pan. Set aside.
  • Mix potatoes, bell peppers, eggs, black beans, and lettuce in a mixing bowl. Fold burrito and place in oven to lightly brown for 10 minutes.
  • Place salsa on top of the burrito after cooking in the oven so as not to get soggy.
NOTES

Notes

You can also sauté the potatoes and bell peppers together in one pan.
