3cupwater
1tablespoongrated ginger
2cupice cubes
2tablespoonhoney or maple syrupor more if you like
3long springs fresh mintor more as desired (optional)

Add the freshly squeezed lemon juice and water to a pitcher.
Rinse the ginger and grate it with the skin using a grater or microplane. Place the ginger pulp in a strainer or dish towel. Squeeze over the pitcher to extract the liquid. You can also use your hands and squeeze out the liquid from the ginger.
Add the honey and ice cubes. Taste test the lemonade. If it is tart add in more water or honey.
Give it a stir and pour into glasses.
I recommend adding the mint last to individual glasses. If you leave the mint in the pitcher for more than a day, it wilts and turns brown so best to enjoy fresh.

If you want less ginger flavor, you can slice the ginger or use less ginger.
