  • 1 cup rolled oats
  • 1 1/2 bananas
  • 2 eggs
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt

For serving

  • Maple syrup or honey (optional)
  • Sliced fruit

Instructions

  • To a blender, add oats, bananas, eggs, baking powder, and salt. Blend until smooth. You can wait 10 minutes to let the batter thicken. This helps the batter rise and cook better.
  • Heat a pan over medium high heat. Add about 1/4 cup of the batter to the pan. Flip the batter with a spatula until both sides are lightly browned. Set the pancake aside.
  • Top pancakes with maple syrup or honey and sliced fruit. Chocolate chips are a fun and festive touch too!

Notes

You’ll want to use all of the batter and cook all of the pancakes at once as the banana will turn brown and the baking powder won’t be as powerful.
The already cooked pancakes taste great reheated later throughout the week. The pancakes keep well stored in an airtight container in the fridge.
