1teaspoonfresh grated ginger(or sub 1/2 teaspoon ground ginger)
2tablespooncornstarch
1/4cupcoconut sugar
1/4cupfresh apple juice

1 1/4cuprolled oatsgluten-free if desired
1/2cupalmond flour or almond meal
1/2cupalmondsroughly chopped

Preheat the oven to 350 F / 176 C.
Peel the apples using a paring knife.
In a mixing bowl, add apples, lemon juice, cinnamon, ginger, cornstarch, coconut sugar, and apple juice. Mix until well combined. Transfer mixture to 9x13 inch baking dish.
In a mixing bowl, add topping ingredients and mix until well combined. Spread the apple mixture in the baking dish.
Bake for 45 minutes - 1 hour or until the top is lightly golden. Let cool and serve.

Notes
Feel free to use water instead of apple juice. This will make it less sweet. I personally prefer using fresh apple juice.This tastes delicious cut into individual squares and reheated in the oven.
