This baked oatmeal with bananas recipe is quick and easy. It only requires one bowl my friend. So why not start the day with something you love, a little chocolate and peanut butter.

INGREDIENTS

  • 2 1/2 ripe bananas mashed
  • 1/3 cup peanut butter plus more for topping
  • 1/4 cup honey or maple syrup
  • 1 cup almond milk unsweetened (or sub with any plant based milk)
  • 2 1/2 teaspoon vanilla extract
  • 3 cup rolled oats gluten-free if desired
  • 1/2 cup cocoa or cacao powder
  • 1 teaspoon salt (You can omit the salt if the peanut butter already gives it enough salt)
  • 2 tablespoon chocolate chips

Instructions

  • Preheat the oven to 350 F / 176 C. Use a 9x13 baking pan. If using a metal baking pan, lightly grease the pan or you use parchment paper.
  • In a mixing bowl, combine the bananas, peanut butter, honey, almond milk, and vanilla extract. Stir until well combined.
  • Then, add in the oats, cocoa powder, and salt. Stir until combined. Transfer to the baking pan and spread out the oat mixture. Top the oatmeal with chocolate chips.
  • Bake in the oven for 30 - 35 minutes. Let cool before cutting.
  • Best enjoyed warm. This baked oatmeal tastes great cut into individual slices and heated up throughout the week.

Notes

I like to top this baked oatmeal recipe with peanut butter and then warm it up. The melted chocolate chips and warm peanut butter taste delicious together.
