Vegetable Soup Recipe

This comforting vegetable soup is great to make ahead of time and warm up after a long day. We’ll keep the chopping to a minimum by using frozen veggies.

INGREDIENTS

Ingredients

  • 2 tablespoon coconut oil can use olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 3 potatoes, diced into 1/2 in / 1 cm pieces
  • 2 tomatoes, diced
  • 2 bay leaves
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups frozen broccoli
  • 5 cups frozen mixed vegetables
  • 1/2 teaspoon chili pepper flakes
INSTRUCTIONS

Instructions

  • Start by heating coconut oil in a large pot over medium heat.
  • Add onion and saute for 3 minutes.
  • Add garlic and saute for 30 seconds longer.
  • Then, add your vegetable broth, potatoes, tomatoes, bay leaves, dried oregano, salt, and pepper. Bring to a boil and then reduce heat to a simmer and cook for 15 minutes.
  • Add the remaining ingredients and cook for another 10 minutes.
NOTES

Notes

When we use fresh vegetables, it can enhance the flavor more. It requires extra chopping though and a longer cooking time.
Feel free to add any vegetables you have on hand. Cauliflower, broccoli, and zucchini all work well together.
