This comforting vegetable soup is great to make ahead of time and warm up after a long day. We’ll keep the chopping to a minimum by using frozen veggies.
Start by heating coconut oil in a large pot over medium heat.
Add onion and saute for 3 minutes.
Add garlic and saute for 30 seconds longer.
Then, add your vegetable broth, potatoes, tomatoes, bay leaves, dried oregano, salt, and pepper. Bring to a boil and then reduce heat to a simmer and cook for 15 minutes.
Add the remaining ingredients and cook for another 10 minutes.

When we use fresh vegetables, it can enhance the flavor more. It requires extra chopping though and a longer cooking time.Feel free to add any vegetables you have on hand. Cauliflower, broccoli, and zucchini all work well together.
