  • 3/4 cup dates If dry soak in water for 10 minutes and drain water.
  • 1 cup rolled oats
  • 2 tablespoon chocolate chips
  • 3 tablespoon peanut butter
  • 1/2 teaspoon salt
INSTRUCTIONS

Instructions

  • Add oats to a blender or food processor and make an oat powder. Set the oats to the side.
  • Add dates to a food processor or blender and pulse until it forms a ball.
  • Add oats, chocolate chips, peanut butter, and salt to the food processor and pulse. The mixture should be combined but not overly processed.
  • Form balls with your hands. Place in the fridge for 15-30 minutes to enhance the flavors.
NOTES

Notes

The peanut butter energy balls will keep for 7-10 days in the fridge. Store in the freezer to keep these longer.
I love to roll the balls in shredded coconut.
