Peanut Butter Energy Balls
These peanut butter energy balls are bursting with sweet chocolatey goodness. Made in minutes and enjoyed anywhere - in our homes, at work, or on the road.
- 3/4 cup dates If dry soak in water for 10 minutes and drain water.
- 1 cup rolled oats
- 2 tablespoon chocolate chips
- 3 tablespoon peanut butter
- 1/2 teaspoon salt
Add oats to a blender or food processor and make an oat powder. Set the oats to the side.
Add dates to a food processor or blender and pulse until it forms a ball.
Add oats, chocolate chips, peanut butter, and salt to the food processor and pulse. The mixture should be combined but not overly processed.
Form balls with your hands. Place in the fridge for 15-30 minutes to enhance the flavors.
The peanut butter energy balls will keep for 7-10 days in the fridge. Store in the freezer to keep these longer.
I love to roll the balls in shredded coconut.
