Servings 5 cups (approx. 1 1/4 cup per serving including ice)

INGREDIENTS

Ingredients

  • 3 lemons juiced
  • 3 cup water
  • 1 tablespoon grated ginger
  • 2 cup ice cubes
  • 2 tablespoon honey or maple syrup or more if you like
  • 3 long springs fresh mint or more as desired (optional)
INSTRUCTIONS

Instructions

  • Add the freshly squeezed lemon juice and water to a pitcher.
  • Rinse the ginger and grate it with the skin using a grater or microplane. Place the ginger pulp in a strainer or dish towel. Squeeze over the pitcher to extract the liquid. You can also  use your hands and squeeze out the liquid from the ginger.
  • Add the honey and ice cubes. Taste test the lemonade. If it is tart add in more water or honey.
  • Give it a stir and pour into glasses.
  • I recommend adding the mint last to individual glasses. If you leave the mint in the pitcher for more than a day, it wilts and turns brown so best to enjoy fresh.
NOTES

Notes

If you want less ginger flavor, you can slice the ginger or use less ginger.
