These energy balls with dates are a quick and easy snack to enjoy anytime of day. This recipe is a twist on the classic oatmeal raisin cookie. You can enjoy the flavors that you loved in an oatmeal cookie all ready to go in an energy ball. And they don’t call for many ingredients.

INGREDIENTS

  • 1 cup dates chopped
  • 1/2 cup almond flour
  • 1/3 cup peanut butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 3/4 cup raisins

Instructions

  • Add the almond flour and dates to a food processor and pulse until it becomes well combined.
  • Add the peanut butter, cinnamon, salt, and vanilla to the date mixture. Pulse until it becomes a dough like mixture.
  • Add the peanut butter, cinnamon, vanilla extract, and salt, and pulse until a sticky dough forms. Then add the oats and pulse. If needed, add water 1 tablespoon at a time until you’ve achieved a dough like consistency. The mixture should be combined but not overly processed.
  • Place the energy date balls mixture in a large mixing bowl. Gently fold in the raisins.
  • Form balls with your hands. Place in the fridge for 15-30 minutes to enhance the flavors.
NOTES

Notes

These energy balls with dates will keep for 7-10 days in the fridge. Store in the freezer to keep these fresh longer.
You can also substitute the raisin with cranberries.
