Who would have known that you can make a pudding with coconut milk and chia seeds!? This dish makes for a great afternoon snack or dessert. Sprinkle on your favorite toppings and enjoy!

INGREDIENTS

Ingredients

  • 2 tablespoon cacao or cocoa powder
  • 2 tablespoon honey or maple syrup
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3/4 cup coconut milk unsweetened (or sub with any plant based milk)
  • 1/4 cup chia seeds
INSTRUCTIONS

Instructions

  • Combine cacao/cocoa powder, honey, cinnamon, vanilla, and salt in a bowl. Stir with a spoon to combine. Add the coconut milk and stir.
  • Add the chia seeds and stir again. Let the chia pudding mixture stir for five minutes and stir once more.
  • Place in the fridge for 2-3 hours to create the chia pudding texture.
  • Top with shredded coconut, sprinkle of salt, and granola.
NOTES

Notes

You can also top with peanut butter to give it that brilliant chocolate peanut butter combo.
