INGREDIENTS

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup coconut sugar
  • 1/2 cup coconut oil melted
  • 3/4 cup water
  • 2 teaspoon vanilla
  • 1 cup rolled oats gluten-free if desired
  • 1/2 cup raisins

Instructions

  • Preheat the oven to 350 F / 176 C and line two baking trays with parchment paper.
  • In a bowl, add the flour, baking powder, baking soda, cinnamon, and salt. Give it a stir. Set aside.
  • In a separate mixing bowl, add the coconut sugar, coconut oil, water, and vanilla. Stir with a spatula or whisk.
  • Add the bowl of wet ingredients to the mixing bowl of dry ingredients. Stir until well combined. Add in the oats and raisins. Give it a stir.
  • Make 1 tablespoon dough balls and shape into cookies. Set on the parchment lined tray.
  • Cook for 10-12 minutes in the oven. Then, let cool before eating.
NOTES

Notes

You can also add in chocolate chips or substitute the raisins with cranberries. It’s up to you.
