This recipe for how to make granola bars requires only 7 ingredients and takes 15 minutes. You don’t even need to bake it. You’ll also find that it’s another guilt free option as you can use natural sugar from dates to sweeten this up.

  • 1 cup dates
  • 1/4 cup peanut butter
  • 2 tablespoon honey or maple syrup if vegan
  • 1 cup almonds loosely chopped
  • 1 1/2 cups rolled oats
  • 1/4 cup cranberries
  • 1/2 teaspoon salt
INSTRUCTIONS

Instructions

  • Add dates to a food processor and pulse until a dough forms.
  • To a bowl, add almonds, cranberries, oats, and salt. Give it a stir. Set aside.
  • In a small saucepan over low heat, warm the peanut butter and honey.
  • Pour the warm peanut butter and honey over the oat mixture and stir. Then add in the dates and mix again.
  • Once well combined, transfer to a 8×8-inch baking dish. I like to use a pyrex dish. Then line it with parchment paper. The parchment paper helps easily remove these bars and keep their shape later on.
  • Press down with the back of a spoon or spatula until flattened. By pressing down, this also helps the bars later keep their shape.
  • Place in the fridge or freezer for 15-20 minutes.
  • Remove bars from the pan and chop into 10 squares. Keep in the fridge or freezer. I like to keep mine in the freezer so they stay fresh and have an extra crunch which is helpful in those warmer months.
NOTES

Notes

You can substitute the almonds for any nuts or seeds on hand. Pumpkin seeds are a great option!
