What makes a breakfast burrito taste so good? It’s all in the filling. No need to add in any meat although if you like feel free to. You’re the boss sista.

This breakfast burrito recipe has a ton of flavor. By sautéing the potatoes and red bell peppers, it gives this recipe an oh so fresh flavor. You can enjoy this recipe whenever you please for breakfast, lunch or dinner.

I’m all about breakfast for dinner over here and realize that I rarely eat eggs for breakfast yet love them as a quick dinner option – scrambled eggs, avocado on toast with poached egg, and even this breakfast burrito.

EASY PREP WORK

So often when it’s dinnertime you’re looking for a quick and easy option. So for that you can, sauté the potatoes and bell peppers ahead of time.

When you’re ready to eat, scramble some eggs and then in a bowl mix the eggs, potatoes, peppers, black beans, and lettuce together. Voila, your breakfast burrito can be heated up and ready to eat in just 15 minutes.

HOW TO MAKE A BREAKFAST BURRITO

Sauté potatoes and onions together. Add in the garlic and spices after a few minutes. Cook for 15 minutes turning occasionally until the potatoes are lightly browned. Set aside.

Sauté bell peppers in a separate pan. Add the garlic at the end so that it does not burn. Cook for about 5-7 minutes. Set aside.

Scramble the eggs in a separate pan. Set aside.

Mix potatoes, bell peppers, eggs, black beans, and lettuce in a mixing bowl. Fold burrito and place in oven to lightly brown for 10 minutes.

  • 1 tablespoon coconut or olive oil
  • 1/2 onion chopped

  • 2 teaspoon paprika powder
